Vegan Mofo Day 1 - Baked Oatmeal

So, here we go. This is my 7th year of doing Vegan Mofo!!! I've approached it in different ways over the years with no themes, weekly themes, month long themes and this year I'm going to be ambitious (or stupid!) and try a theme within a theme within a theme. Welcome to my Vegan Month of Food where I will endeavour the follow the daily prompts whilst talking about breakfast dishes where said breakfast dishes feature fruit and/ or nuts. Kicking off with the theme of favourite food I'd thought I'd talk about my current favourite breakfast dish which is baked oatmeal. It takes more time than porridge so it tends to be reserved for days off or weekends but I think that makes it feel a little bit more special. Cooking for the Bank Holiday Weekend and a Music Alldayer

My partner Matt is a singer songwriter  with the stage name Quiet Loner and our weekends are often taken up with him playing at gigs, going to gigs and sometimes hosting gigs. We put on a bi-monthly show in Glossop called Defiance Sessions with musicians from all over the UK coming to our little town and staying with us. The next one is May 28 and features Chris TT and fellow vegan Efa Supertramp . Here's Matt talking more about it. Tomorrow Matt is playing at an all day festival in Barnsley. I've been cooking food today that will also double up as wrap fillings to keep us going tomorrow. First up is this recipe from Isa Does It . The book just fell open at this page and as I'd never made it before and had all the ingredients it was a must try. Rather than fry the tofu I tossed it in sesame oil, salt and pepper and then oven baked it. It came out great with a lovely texture. Getting Your Oats

Making the Pudla in my last post on New Year's Day morning seems to have ignited an enthusiasm for trying new breakfast ideas. I've been specifically looking for things to make with oats. We are watching our cholesterol and on a limited budget these days so oats are a great choice for us. However Matt's not that keen on standard porridge and we've done overnight oats to death so I needed to go in search of a little inspiration. The bottom two books in the pile are from the library whilst the top one Keep It Vegan by Aine Carlin has been languishing on my bookcase. This fab round up of recipes from it by Susan at Kittens Gone Lentil inspired me to revisit it again though. First up was Wake-me up Porridge from The Chakra Kitchen . The foreword to the book is a bit new-agey for me with talk of using crystals but each to their own and the porridge was delicious and different.
