Cheatin' Bailey's
Serves 1
Ice
2 x double shot of coconut milk
Few drops of vanilla extract
1 teaspoon of instant coffee
1 teaspoon of powdered drinking chocolate
1 tablespoon of boiling water
1 shot of Irish whiskey
1 teaspoon of agave syrup
Put the coffee and chocolate in a cup. Add the boiling water and stir until dissolved.
Add all of the ingredients including ice to a cocktail shaker. Shake well until chilled.
Serve in a glass tumbler over ice.
PS - the round thing drawn on the glass isn't a slice of orange as it looks in the photo! It's part of a picture of the London skyline around the glass and it's the London Eye. It's part of a lovely set of glasses my mum got me for Christmas the other year. The other skylines are Paris, San Fransisco and New York.
That is such a good idea. Thanks. :)
ReplyDeleteWhat a clever thing to do! Looks delish!
ReplyDeleteThat drink looks amazing! And your glasses are cute.
ReplyDeleteSeconded - a very clever idea. Now I just need to find an excuse to open a can of coconut milk!
ReplyDeleteYum! I always have the same problem with coconut milk. Your vegan Baileys looks like an amazing solution.
ReplyDeleteBookmarked! For when I'm no longer pregnant ;)
ReplyDeleteThose glasses are great! And this drink looks and sounds really good!
ReplyDeleteBrilliant recipe and beautiful glasses! I'm a sucker for sets like that.
ReplyDeleteThat sounds good. I'd only ever had bailey's (before becoming vegan) in a drink called a slippery nipple. It was baileys and butterscotch schnapps. Might have to give this a try.
ReplyDeleteI had to laugh because I do the exact same thing with excess coconut milk, it's such a waste but now I can do this each time that happens! A friend and I always used to drink Baileys but of course once I was vegan I had to stop so she'll be pleased we can from now on!
ReplyDeleteOH Goodness!
ReplyDeleteI love this!
Yum, I'll have to remember this next time I want Baileys at Christmas time. I love your glasses too.
ReplyDeleteHell yes.
ReplyDeleteSome love for:
ReplyDelete1. Your use of leftover coconut milk (I'm always wasting it also)
2. Our mutual enjoyment of tea (I'm sometimes embarrassed by my collection of tea gadgets)
3. A great blog.
Thanks!
