Vegan Mofo Day 10 - Something Blue - Blue Moon Blueberry Tea Loaf Recipe


This challenge has had me scratching my head and I almost gave up. I knew for sure that I didn't want to invest in a bottle of blue food colouring but I had no idea how else I was going to approach it. Then on the same day Matt mentioned blueberries and a fellow vegan at work mentioned that she'd been making Blue Moon ice cream when I suddenly remembered that Blue Moon Beer is suitable for vegans. Hooray! So here we have a variation on my favourite Chocolate Stout and Cranberry Bread recipe.


Mmm, look at how chocolately that batter is. The tea loaf is actually oil free and the beer seems to work in some magic way to give it the best texture. The beer doesn't dominate the flavour at all.

Ingredients

2 cups of plain flour
1/2 cup of unsweetened cocoa powder
1 cup of caster sugar
1 teaspoon of baking powder
1 teaspoon of cinnamon
1 teaspoon of vanilla extract
1 bottle of Blue Moon beer (355ml)
1/2 cup of blueberries
3/4 cup (100g bag) of chocolate chips - keep some aside for the topping
Flaked almonds for topping

Method

Pre-heat the oven to 180C/ 350F/ Gas 4
Grease and flour a loaf tin.
Mix all of the dry ingredients together in a bowl.
Add the vanilla extract and beer and mix well.
Fold in the blueberries and chocolate chips.
Pour the batter into the baking tin and top with the reserved chocolate chips and flaked almonds.
Bake for 50 minutes. Would recommend covering the top with foil after 35 minutes to prevent the almonds from browning too much.
Leave to cool in the tin on a cooling rack.

  3. Oh WOW! What's NOT to like about this post! YUM! Great take on this one, too! Way to Go! I LOVE blueberries!!!! This year they seemed to taste even better than the last few years!

    1. Thanks Jennifer. I was really pleased to be able to afford organic blueberries for this recipe. The Soil Association in the UK have September as their month to promote organic farming so lots of shops have promotions on organic produce and these were a bargain price!

  5. lovely! I love fresh blueberries but they often cost a million bucks here, so it's frozen for me (when the frozen berries are half priced at the supermarket!)

  6. Great idea! I 'd hazard a guess that the Blue Moon is even better than stout in a cake...I haven't had it in a few years, but I remember it having a nice "spice flavor" profile.
