Magic Muffin Generator - Mike K's Lime, Pineapple and Dark Chocolate Chip Muffins
Something totally tropical for the next Magic Muffin Generator selection. These Lime, Pineapple and Dark Chocolate Chip flavour muffins suggested by Mike K are just the thing when we're having day after day of rainy Manchester weather! I picked up a carton of this new Provomel Rice and Coconut Milk in Eighth Day on Saturday and it worked really well in this recipe.

until a toothpick comes out clean.
Pineapple and dark chocolate... Wonder why I've never had that combo before. Thanks for sharing!
ReplyDeleteOoooh nice, I love lime in baked goods and you're right, coconut milk goes with these flavours perfectly.
ReplyDeleteAnother winning flavour combination - these would go lovely with some rum-based drink!
